Prepare ingredients as mentioned in the list.
Heat 2 tablespoons of oil in a karahi and add the bay leaf, crushed garam masala and cumin seeds. Then add the boiled eggs and gently fry for 5 minutes or till golden brown along with salt and turmeric powder. Remove and keep aside.
In the same karahi add the remaining 1 tablespoon oil and sauté the tomatoes and green chillies till the tomatoes become soft, now add the boiled eggs. Then add the water and simmer for 5 minutes. For extra taste, add a sachet of MAGGI Masala-ae-Magic, mix well and simmer for another 2 minutes.
Serve hot with rotis, luchis or parathas.
