All time favorite, it is a variant of scrambled eggs. A traditional breakfast favorite or a quick lunch/dinner option with parathas, when you are short of time.
Heat oil in a karahi and add the onions, tomatoes and green chillies and cook until tomato softens.

Add the beaten eggs and mix it with a fork to scramble the eggs, cook for 2-3 minutes. For a chatpata Egg Bhurji, add a sachet of MAGGI Masala-ae-Magic alongwith the beaten eggs.

My all-time favorite is egg bhurji. I love the way my breakfast gets served, especially when it’s egg bhurji. One day my sister wished to experiment as we had nothing else to try and to eat during lockdown. Although I was in no mood for this but who can stop her. She did what she wanted to do, and the taste was lavish. It was the best egg bhurji I tried, and when I asked her what was different, all she said was MAGGI Masala-ae-Magic. Uff. It was yumm.
