This is a niramish recipe which means it is without onion and garlic.
Alur Dom is a special Bengali potato dish, made in the east with freshly harvested baby potatoes. It is best enjoyed with luchi and cholar dal and it is extremely flavourful and rich in its spicing palette. For a special occasion, add in a tablespoon of cream or just before serving, top with grated paneer.

Prepare ingredients a mentioned in the list.

Heat the oil in a karahi, fry the potatoes till they turn light brown. Remove and keep aside. To the rest of the oil, add the bay leaf, garam masala and jeera, allow to splutter.

Add the chopped tomatoes, turmeric, red chili powder and salt, fry till the tomatoes turn mushy and soft.

Add the potatoes and sugar, mix well. Sprinkle the water and cook for 5 minutes. Add the green chillles and MAGGI Masala-ae-Magic, mix it well and sauté for 2 minutes.

Just before serving add the cream and garnish with grated paneer. Serve with rotis, luchis or parathas.
