Charchuri is a typical Bengali side dish with a unique signature spice note of panchphoron - the Bengali five spice. This spice mixture is common across the eastern part of the country and can be used for any dry mixed vegetable dishes or even single vegetable. Charchuri is usually eaten with a lentil dish and gobindobhogh steam rice.
Heat the oil in a karahi and add the panchphoron, then add the green chilies and potatoes and fry for 2-3 minutes.
