Cut the carrots, potatoes into small pieces. Capsicum into medium pieces.
In a pan add oil, add seasme seeds and peanuts and fry them till golden brown. Let them cool and make a course powder.
In the same pan add little oil, add jeera, cumin seeds, urad dal, curry leaves, red chillies and fry them for tadka. Keep this aside.
For Cooking:
In a cooker, pour potatoes as 1st layer, then carrot layer, then on them capcicum. Add Salt, turmeric, chilli powder, maggi masala, seaseme seed and peanuts powder on the top. Add the tadka on above all, add 1 cup water and keep the whistle.
Wait until 1 whistle comes. Once its done let it cool and keep it in simmer on stove until the extra water gets evporated
Garnish with corriander and serve hot rice or roties.
