The Ingredient List
For Baingan roasting:
- Baingan – 1 (normal)
- Mustard oil – 1 teaspoon
For Baingan Bharta:
- Oil/Butter – 3 tablespoons
- Mustard seeds - ½ teaspoon
- Ginger – 1 teaspoon (finely chopped)
- Garlic – 1 teaspoon (finely chopped)
- Onion – 1 nos (chopped)
- Tomato – 1 nos (chopped)
- Green chilli – 1 nos (chopped)
- Frozen peas – 1 small cup
- Salt to taste
- Turmeric powder - ½ teaspoon
- Red chilli powder – 1 teaspoon
- Coriander powder – 1 teaspoon
- MAGGI Magic Masala – 1 teaspoon
- Garam masala - ½ teaspoon
- Dry mango powder - ½ teaspoon
- Coriander leaves
- Water as required
The Easy Steps
- First greece a baingan with mustard oil and roast it on medium flamee. After roasting from all the sides, peel it and keep the baingan aside.
Process for baingan bharta:
- First of all heat the oil in a pan and add mustard seeds and ginger – garlic and stir it for 15 – 20 secs then add chopped onions and cook till translucent, then add chopped tomatoes and chopped green chillies add half teaspoon salt and cook for 2 – 3 minutes, then add frozen peas and add all the spices (Turmeric, Red chilli and coriander powder) as well.
- After the spices are cooked well, add a tablespoon of MAGGI Magic Masala and add a little water, stir well and then add the roasted baingan, garam masala, dry mango powder and chopped coriander leaves and mix it well and Cook for 1 min. Garnish with finely chopped coriander leaves.
