The Ingredient List

For Baingan roasting:

  • Baingan – 1 (normal)
  • Mustard oil – 1 teaspoon

For Baingan Bharta:

  • Oil/Butter – 3 tablespoons
  • Mustard seeds - ½ teaspoon
  • Ginger – 1 teaspoon (finely chopped)
  • Garlic – 1 teaspoon (finely chopped)
  • Onion – 1 nos (chopped)
  • Tomato – 1 nos (chopped)
  • Green chilli – 1 nos (chopped)
  • Frozen peas – 1 small cup
  • Salt to taste
  • Turmeric powder - ½ teaspoon
  • Red chilli powder – 1 teaspoon
  • Coriander powder – 1 teaspoon
  • MAGGI Magic Masala – 1 teaspoon
  • Garam masala - ½ teaspoon
  • Dry mango powder - ½ teaspoon
  • Coriander leaves
  • Water as required

The Easy Steps

  1. First greece a baingan with mustard oil and roast it on medium flamee. After roasting from all the sides, peel it and keep the baingan aside.

Process for baingan bharta:

  1. First of all heat the oil in a pan and add mustard seeds and ginger – garlic and stir it for 15 – 20 secs then add chopped onions and cook till translucent, then add chopped tomatoes and chopped green chillies add half teaspoon salt and cook for 2 – 3 minutes, then add frozen peas and add all the spices (Turmeric, Red chilli and coriander powder) as well.
  2. After the spices are cooked well, add a tablespoon of MAGGI Magic Masala and add a little water, stir well and then add the roasted baingan, garam masala, dry mango powder and chopped coriander leaves and mix it well and Cook for 1 min. Garnish with finely chopped coriander leaves.
