Andhra cuisine has fans all around the world for its spiciness but Royalla Pulusu or Andhra-style Prawn Curry is a perfect example of this South Indian state’s diverse culinary heritage. Tamarind pulp is used to flavour this curry and it adds a lovely tang, which perfectly complements the sweet, delicate flavour of prawns. So next time you are in the mood for some seafood at home, remember that a touch of Andhra Pradesh is just a few simple steps and ingredients away! To make Andhra Prawn Iguru (Prawn fry), do not add the water, just stir fry the prawns in the masala till cooked.
